permitís, del Mar el Centollo, entre otras delicias de
mariscos nos ofrece nuestro mar.
Este año el centollo ha sido el
rey de las pescaderías y marisquerías de mercado en Galicia, ya que su
abundancia ha ofrecido buenos precios y calidad. Quizás el motivo ha sido la
carencia de pulpo ya que el pulpo, come centollo.
En cualquier caso es una delicia
y en Galicia es lo que tiene, un marisco inigualable.
Para cocinar un buen centollo, es
obvio, que es necesario un marisco de calidad pero tener muy claro los tiempos
de cocción para que no quede crudo y tampoco quede muy pasado y seco.
Para cocer el centollo es
necesario coger una pota, llenarla de agua, si es de mar mucho mejor, y añadir
sal (si el agua no es de mar) y unas hojas de laurel, porque a mí me gusta
aunque hay personas que detestan añadir laurel a la cocción del marisco.
Esto va a gustos.
Una vez lo tenemos, lo ponemos al
fuego y cuando empieza la ebullición introducimos el centollo que debe quedar
cubierto por el agua. Veremos que la ebullición desaparece pero debemos esperar
a que el agua vuelva a hervir y a partir de ese momento hay que contar 15
minutos por cada kilo de centollo.
Si el centollo se le rompiera una
pata o le faltara, hay que meter una
miga de pan antes de meterlo en el agua para que no salga el jugo por
ese orificio.
Una vez transcurrido ese tiempo,
lo sacamos de la pota y lo dejamos enfriar en una bandeja a temperatura
ambiente. A mí me gusta así, pero si a alguien le gustara más frio o lo
quisiera consumir al día siguiente, entonces es mejor meterlo en la nevera y
sacarlo media hora antes de comerlo para que se atempere.
Para mi gusto el centollo debe
estar frio pero no helado pero este concepto es un tema de gustos.
Sin embargo, no quiero dejar aquí
este post, creo que este marisco es digno de hablar de él un poco más y de
enunciar sus propiedades nutricionales que nos pueden favorecer aunque no
podemos excedernos.
El centollo aporta agua y
proteína pero no hidratos de carbono así que no engorda pero si puede
perjudicar la salud en un consumo abusivo.
En cuanto a Minerales podemos
encontrarnos con aportes importantes de Sodio,
Fosforo, potasio, magnesio y yodo entre otros.
Por ejemplo, el yodo favorece a
nuestro organismo en el funcionamiento de tejidos nerviosos y musculares,
colaborando a su vez, en el metabolismo incrementando su velocidad.
Sin embargo, los hipertensos
deben tener cuidado y consumir este marisco con cautela, ya que posee bastante
sodio y podría ocasionar problemas
cardiovasculares, hipertensión o retención de líquidos.
Por otro lado, también nos aporta
magnesio que actúa como un vasodilatador y colabora en la fijación del calcio
reforzando huesos y dientes. Se estima que alrededor del 60% de magnesio que
asimilamos va dirigido a los huesos y dientes.

SEAFOOD: CRAB AND ITS NUTRITIONAL PROPERTIES
It is already known that from the
Earth the lamb and if you allow me, from the Sea the Crab, among other seafood
delicacies our sea offers us.
This year the spider crab has
been the king of fishmongers and market seafood in Galicia, since its abundance
has offered good prices and quality. Perhaps the reason has been the lack of
octopus since the octopus, eat spider crab.
In any case it is a delight and
in Galicia is what it has, a unique seafood.
To cook a good spider crab, it is
obvious, that it is necessary to have a quality seafood but to be very clear
about the cooking times so that it does not remain raw and it is not too old
and dry.
To cook the spider crab is
necessary to take a squid, fill it with water, if it is much better sea, and
add salt (if the water is not from the sea) and some bay leaves, because I like
it although there are people who hate to add laurel to the cooking of seafood.
This is going to taste.
Once we have it, we put it on the
fire and when the boiling starts we introduce the spider crab that should be
covered by the water. We will see that the boil disappears but we must wait for
the water to boil again and from that moment we have to count 15 minutes for
each kilo of spider crab.
If the spider broke a leg or it
was missing, you have to put a crumb of bread before putting it in the water so
that the juice does not come out through that hole.
Once that time has passed, we
take it out of the squid and let it cool on a tray at room temperature. I like
it that way, but if someone liked it colder or wanted to consume it the next
day, then it's better to put it in the fridge and take it out half an hour
before eating it so that it's tempered.
For my taste the spider must be
cold but not frozen but this concept is a subject of taste.
However, I do not want to leave
this post here, I think this seafood is worth talking about a little more and
enunciate its nutritional properties that can help us although we can not
exceed.
The crab contributes water and
protein but not carbohydrates, so it does not get fat but it can harm the
health in an abusive consumption.
Regarding Minerals we can find
important contributions of Sodium, Phosphorus, potassium, magnesium and iodine
among others.
For example, iodine favors our
organism in the functioning of nervous and muscular tissues, collaborating in
turn, in the metabolism increasing its speed.
However, hypertensives should be
careful and consume this seafood with caution, as it has enough sodium and
could cause cardiovascular problems, hypertension or fluid retention.
On the other hand, it also gives
us magnesium that acts as a vasodilator and helps in the fixation of calcium by
strengthening bones and teeth. It is estimated that around 60% of magnesium
that we assimilate goes to the bones and teeth.
Above, I include a nutritional
