Quien no se ha enganchado a las
golosinas alguna vez? Y quien puede resistirse a ellas después de pasar la edad
temprana de la niñez? Pues pocas personas. Sus llamativos colores, formas y sus
sabores a frutas convencen a cualquiera.
De pequeños no habituamos a
ellas, luego las dejamos y de mayores aún quedan esas tentaciones de comer
alguna en algún momento, viendo el cine, la tele, paseando… pero es como todo
una vez a la semana y una cantidad moderada no hace daño a nadie pero cuidado
con su composición casi el 70% es azúcar.
El azúcar y sus derivados como el
jarabe de glucosa, fructosa, sacarosa y galactosa entre otros, es lo que les
aporta ese sabor dulce pero hablemos de cómo se consigue su textura blanda y
agradable. Es debido a la gelatina, una sustancia que no tiene sabor ni color,
que procede de los huesos, cartílagos y piel de los animales. Aunque
actualmente también se elaboran con sustancia vegetales como las pectinas,
asegura Nerea Cenoz.
Cada golosina tiene su propia
receta, ésa que le da un sabor, olor y color propios, de lo que se encargan los
aromas y colorantes. Por otro lado, los acidulantes potencian el sabor, además
de conservar el producto, y los gelificantes permiten darles diferentes formas.
Las hay recubiertos de azúcar y ácidos, y otras son lisas, con una capa de
aceite vegetal o cera de abeja para darle ese aspecto brillante y apetecible.
La mayoría de las marcas también incluye una proporción pequeña de zumos de
frutas para evitar los aditivos artificiales y almidones.
Detrás de una bosa de 100 gramos
de gominolas se esconden 375 calorías. Una bolsa de frutos secos tostados del mismo
peso tiene unas 600 calorías, por lo que , visto en perspectiva, los dulces no
son los aperitivos que más energía aportan pero son calorías vacías ya que no
aportan nutrientes.
Conscientes de que la sociedad
está cada vez más concienciada por la salud, los productos naturales, la
reducción del consumo de azúcar, etc…, los fabricantes añaden suplementos
vitamínicos como la vitamina C y sustituyen el azúcar por xilitol o sorbitol, entre otros, para evitar una
parte importante de calorías no necesarias.
Pero el mercado está abastecido
de cualquier chuche menos las consideradas healthy y por ello , una empresa
pensó en hacer golosinas sin aditivos artificiales, conservantes y azucares
blancos. Siguiendo la filosofía de vida saludable, surgió la idea de fundar
Sweetfruit, empresa afincada en Valencia de productos 100% ecológicos a base de
jugos de frutas naturales y azúcar de caña integral. Sin embargo, no es el
único grupo que fabrica golosinas “diferentes”, hay otras que comercializan
dulces típicos escandinavos libres de grasas trans, colorantes artificiales e
ingredientes sin manipulación genética, muchos de ellos libres de gluten,
lácteos, frutos secos o soja, y específicos
para veganos. Pero no esperen ver todos esos colores llamativos y formas
con colores y sabores espectaculares,.
Recetas de gominolas caseras
Ingredientes:
15 gr de agar-agar x litro para que tenga una
textura sólida.
Zumos de fruta o frutas naturales trituradas.
Melazas vegetales, miel o incluso stevia.
Elaboración:
Poner en el cazo el zumo de
frutas o las frutas naturales ya trituradas, el endulzante que prefiramos y el
agar-agar llevándolo a ebullición. Mantener en ebullición suave unos 4-5 minutos
para que se deshaga el alga. A continuación, rellenar los moldes. En una hora
se habrán enfriado las gominolas y estarán listas para comer, aunque al día
siguiente estarán mucho más ricas.
Podemos hacer chucherías de
varios tipos: con una fruta sola o mezclar varias. Podemos hacerlas más light

Homemade Gum Recipes
Ingredients:
15 gr agar-agar x liter to have a solid texture.
Crushed fruit or natural fruit juices.
Vegetable molasses, honey or even stevia.
Elaboration:
Put in the saucepan the fruit
juice or the natural fruits already crushed, the sweetener that we prefer and
the agar-agar taking it to boil. Keep it in a gentle boil for about 4-5 minutes
to dissolve the seaweed. Then fill in the molds. In an hour they will have
cooled the jelly beans and will be ready to eat, but the next day they will be
much richer.
We can make trinkets of various
types: with a single fruit or mix several. We can make them lighter with
